The Lazy Gourmet’s Daily Dishes

Yesterday I posted about my weekly workflow to help me get delicious meals on my plate each day. Today, I’ll post about the little amount of work I have to do each day to get myself fed.

Breakfast:

  • Make my omelette (in the microwave if I’m feeling lazy, which I am most morning)
  • Reheat my quinoa for breakfast (in the microwave)
  • Grate extra zucchini if I’ve run out or microwave up some frozen spinach

Snacks:

  • Wash whole raw zucchini, celery sticks and capsicum. I like the crunch of eating them raw with my burgers. If I’m working away from home I do this heading out. Otherwise I do it as I need them.

Lunch:

  • Throw chopped stuff into a big metal bowl with roast chicken, almonds and balsamic

Dinner:

  • Wash and chop bok choy or other perishable greens and throw it in the wok with other pre-chopped stuff, garlic and grated ginger or lime or chilli sauce, a bit of water and my pre-cooked fish/chicken. Cover and steam for a few minutes until warmed through. I don’t like to microwave my dinner.
  • A few times a week I might grill a steak or get some fresh chicken on the go but most night’s I’m happy with steam-fried food.
  • If I want this to be a ‘curry’ then a few more spices and bit more liquid might go in. If I want a bigger batch of curry it can all go in the slow cooker for a few hours.
  • If I’m running low on broccoli I do another batch or steam other veggies such as green beans or cauliflower in my pressure cooker at the same time. Otherwise frozen baby green beans or frozen spinach with a bit of sea salt and garlic paste are just fine by me.
